- Step 1 Bring a large pot of lightly salted water to a boil. Add the ramen and cook until slightly underdone, allowing them to finish cooking in the sauce, about 2 minutes. Drain, reserving 1 cup of the cooking water for later use.
- Step 2 Melt the butter in a medium skillet over medium heat.
- Step 3 Add 1 teaspoon of coarsely ground black pepper to the skillet. Cook, swirling the pan, until the pepper is toasted and fragrant, approximately 1 minute. This step is crucial for allowing the pepper to infuse the butter without burning.
- Step 4 Using tongs, transfer the drained ramen noodles to the skillet along with 1/3 cup of the reserved cooking water.
- Step 5 Gradually sprinkle in the finely grated Parmesan cheese while vigorously mixing the noodles with the tongs. Continue until the cheese, pasta water, and butter combine to form a glossy, smooth sauce that clings to the noodles, about 1 minute.
- Step 6 If the noodles appear dry, add a splash more of the reserved cooking water. Taste a noodle or two to adjust seasoning with salt if needed.
- Step 7 Transfer the seasoned ramen to a serving bowl and top with additional freshly ground black pepper.
